Griddle

Chorizo pasta on the griddle.

Magic of TV — pasta and chorizo go on already cooked, the griddle just brings them together. Splash of water to steam, parmesan-truffle pesto, green onions raw at the end. Off the grill fast.

Ingredients

  • Cooked pasta ("the magic of TV — it's already been cooked")
  • Cooked chorizo
  • Water, for the deglaze
  • Parmesan-truffle pesto sauce
  • Green onions, chopped
  • Parmesan and romano blend

Steps

  1. 01Bring the griddle to a sizzle. "If you can hear that sizzle, you're doing something right."
  2. 02Fold the pre-cooked chorizo and pasta together on the hot griddle. Move it all around to coat.
  3. 03Hit it with a little water to steam.
  4. 04While it's steamy, add the parmesan-truffle pesto. Flip a couple of times. "Give this 60 more seconds on the grill."
  5. 05Slide off the grill as fast as possible — the cheese is going on dry, not melted.
  6. 06Top with green onions and just a little of the parmesan-romano blend. Gentle mix. Serve.
