Open-faced pork tacos.

Rib meat with melted Tillamook cheddar, assembled open-faced on flour tortillas up top so they hold warm while you work the griddle below. Sour cream first, salsa last.

Ingredients

  • Rib meat (the cooked pork from the ribs)
  • Tillamook cheddar cheese
  • Flour tortillas ("I prefer flour over corn anyway")
  • Sour cream
  • Salsa

Steps

  1. 01Cook the pork on the grill first.
  2. 02Move it up top to the warming rail to keep warm.
  3. 03Hit it with Tillamook cheddar to melt.
  4. 04Put sour cream on the flour tortillas.
  5. 05Dress the tortillas up top with the pork and melted cheese.
  6. 06Hit with salsa.
  7. 07Hold up top until people are ready to eat.
