Griddle
Open-faced pork tacos.
Rib meat with melted Tillamook cheddar, assembled open-faced on flour tortillas up top so they hold warm while you work the griddle below. Sour cream first, salsa last.

- Rib meat (the cooked pork from the ribs)
- Tillamook cheddar cheese
- Flour tortillas ("I prefer flour over corn anyway")
- Sour cream
- Salsa
Steps
- 01Cook the pork on the grill first.
- 02Move it up top to the warming rail to keep warm.
- 03Hit it with Tillamook cheddar to melt.
- 04Put sour cream on the flour tortillas.
- 05Dress the tortillas up top with the pork and melted cheese.
- 06Hit with salsa.
- 07Hold up top until people are ready to eat.
